well, nowadays it's a bit hard to get HIV from getting your ear pierced, or any piercing. Only if you go to a really raunchy place where it is evident that it is not sanitary. Kissing can pass on HIV if both parties have a wound or lesion in their mouths and the infected person's saliva gets in. I would be a lot more worried of STDs which can be passed on by something as simple as touch...

Very low. There has NEVER been a case of HIV being transmitted through piercings or tattoos. The HIV virus dies immediately when it contacts open air. The reason that injection needles can transmit HIV is because blood gets trapped inside the barrel, and may be injected into the person when they use it. But piercing and tattoo needles cannot transmit HIV, because they are exposed to the air. However, piercing and tattoo needs CAN transmit Hepatitis, which is a much tougher virus in terms of how long it can survive in open air. Making out does not pose any risk of contracting HIV. He would have to drink GALLONS of saliva in order to have a significant exposure risk through kissing. But if he is having sexual intercourse, then he is at risk.

You are making a lot of assumptions. Ear piercing will not cause HIV infection.
